"Exploring the Sweet and Simple Delight of Honey Joys: A Taste of Australia"

If you like Rice Krispie treats and how easy and versatile they are to make you will love these!

Sweet and quick to make - these are the perfect last minute toss together treat.


This very popular treat is adored Australians and are often found on the food menu for birthday celebrations and special events. Kellogg Cornflakes made their debut in Australia in 1924 and was marketed as a healthy breakfast cereal for children and adults. We don't have information as to who created these joyful little bundles, but we do know the recipe was published in a local newspaper in 1938 and they are still being enjoyed to date!



Honey Joys can be made with wildflower honey or many of the flavored honeys from Vickie's Bees.


The basic recipe only calls for four (4) ingredients, but much like Rice Krispie treats they are easily adaptable. At #vickiebees we have added optional ingredients that have only enhanced the yumminess. We make our Honey Joys using Vickie's Bees signature honey flavors. Some of our favorites over the years have been Sweet Orange Zest, Pumpkin Spice, Cranberry/Orange/Marigold, Apple/Cinnamon/Marigold to name a few. Your imagination can go wild on these little babies!

List of Ingredients

  • 4 Cups of Cornflakes. I like to use organic, clean ingredients cornflakes.

  • 1/3 Cup of Butter

  • 1/3 Cup of Sugar. Usually I remove the sugar in recipes and only use honey, but it isn't possible here.

  • 1/4 Cup + a smidge more of Vickie's Bees Honey (see our shop page) wildflower or any flavor that your prefer. They all taste delsih in this recipe so go with your favorite or experiment with a new flavor. Most recipes say to mix this into the saucepan and heat it up. I don't do that. I drizzle it in unheated. See the recipe.

  • Optional Ingredients that we add to this basic recipe include cranberries, pistachios or walnuts, any type of dried fruits that you like or think will compliment whichever honey flavor you selected.

  • They can be decorated with cake sprinkles, but don't have to be.

Prepare before you cook:


Preheat the oven to 300F/150 C. Line a muffin pan with paper cups. I find it is better to have everything prepared and measured out prior to heating and baking since this recipe can set-up quickly and become a little gooey.


Let's Get Started


In a large bowl measure out 4 cups of cornflakes. This will yield 12 servings so double or triple all your ingredients accordingly to the quanties you need.


Add the butter and sugar into a saucepan. On medium-low heat, melt everything together until bubbly and well mixed together.


Remove from the heat and add mixture to the cornflakes. Drizzle honey all over the mixture. Use a wooden or silcone spoon to stir and evenly coat all the cornflakes. Add optional ingredients and blend in to mixture making sure to well coat the cornflakes.


Using an icecream scoop. Scoop mixture into paper cups. It is okay to heap them up in the cups creating little mounds. I think it even looks more inviting.


Bake in the oven for 10 minutes. Remove from oven and muffin pans. Allow to cool on a cookie rack so your don't burn the bottoms. Allow to cool for approximately 10 minutes so the sugar and honey have had time to cool and set.





 

What's not to love...

Honey Joys can be made up to two days ahead of time. Stored in an air tight container that will stay good for a week.


Honey Joys are the perfect and perfectly unique treat for parties, snacks, school parties, and taste great with coffee too.
