Blissful little Peanut Butter Bites (No Bake)

Soft, delicious, and easy to make, What else could you want? How about healthy too!



This recipe is easy to make and prep time is minimal. I replaced 1 Cup of Powdered Sugar with 1 Cup of Ka"Chava Nutrition Shake Powder to make them healthier. If you don't know about Ka'Chava you can read more about it here https://www.kachava.com . This product is chocked full of healthy stuff! I also added drizzles of honey a little bit at a time until the mixture held together nicely when scooped into balls. When serving you can drizzle a little more honey if you like.


Blissful little Peanut Butter Bites


Ingredients


  • ½ stick unsalted butter, room temperature

  • 1 cup of creamy peanut butter

  • 1 cup of Ka'Chava (see the note above with the link)

  • 1 cup of crushed and crumbed graham crackers (you can buy a box of graham cracker crumbs or you can use 1 sleeve or 9 crackers make sure they are small crumbs to mix smoothly into the bites)

  • Any flavor of Vickie's Bees wildflower or flavored honey ( I used plain wildflower) for drizzling


Directions



  1. Line a small muffin pan with small cupcake liners. If you don't have that, line a cookie sheet with parchment paper or a silicone mat

  2. In a large bowl, cream the butter, peanut butter, Ka'Chava, and graham crackers. Using a mixer blend until all ingredients are thoroughly combined. Drizzle a small amount of honey and mix. Roll or scoop into a small ball. If it holds together nicely you can go to the next step. If it is still dry and crumbling drizzle a little more honey - slowly and a little at a time until the bites hold together without being mushy.

  3. Using a scoop or spoon form balls (bite-sized) and place them in the cupcake cups or on the baking sheet lined with parchment or silicone mat.

  4. Chill at least 30 minutes


Optional: Melt 8 ounces of Semi-sweet baking chocolate using the (double-boiler method or microwave) using two spoons to hold the the bites - dip them into the melted chocolate. Transfer to the baking sheet. chill at least 30 minutes to set the chocolate.


Note: If you don't want to make them healthier and do not want to use Ka'Chava Powder simply replace the Ka'Chava with 1 cup of powder sugar. Follow the directions the same way just using the substitution.
